Copenhagen - Food Capital of Europe

I think Copenhagen is the food capital of Europe. The quality and diversity and creativity is unmatched. Most people agree it all started in 2003 when Noma opened. Noma is one of the most awarded restaurants in the world with an impossible to get reservation during it's entire run. It's reinvention and interpretation of Nordic cuisine bought it front and center to the world. Countless chefs who trained and worked at Noma have gone out to the world and opened their own restaurants. Sadly, Noma closed it's doors at the end of 2024 but it's legacy lives on. 

In the last twenty years, the food scene in Copenhagen exploded with the initial spark set by Noma. Everything I ate in Copenhagen was fresh and delicious with many foods I've never seen or heard of. Their focus on sustainability further drives creativity and innovation. Not to mention, every plate looks like a painting. 

Here are some highlights: 

New Nordic Cuisine - this is "new" so to speak because of new techniques to present the flavors of the Nordic region. The idea to preserve and forage what is available has been around a long time. (Restaurants: Hรธst, Admiralgade 26)

Coffee - I'm not a coffee snob but I can tell if it tastes like good coffee. The coffee in Copenhagen is among the best in Europe. (Coffee shops: H A N S Coffee, Packhouse, Les Amis)

Smรธrrebrรธd - this is an open face sandwich with rye bread and the toppings can literally be anything. (Restaurant: Selma) 

Seafood - Denmark is surrounded by water. The seafood is as fresh as you can get. (Restaurants: ILUKA, Hรธst)

Copenhagen is also a beautiful city. It rivals Amsterdam for its canals and bikes. The people are lovely. The history is immense. The architecture is breathtaking. Copenhagen checks off everything you can want in a European city.

I can't wait to go back!
